She may not be my Grandma, but boy am I thrilled to have Grandma Emily’s Granola as our new sponsor! Just yesterday a box of Grandma Emily’s products arrived at my door, and it was like Christmas all over again. The first product to catch my eye was the 100% Organic Maple Peanut Butter Granola. This was the first product we got to sample when we first visited Andrea and her team at the factory in Montreal a few months ago. This granola is a delicious and balanced combination of sweet hearty goodness and can be used tons of ways. Our goal is to showcase granola beyond breakfast; although after having this for dinner last night I couldn’t resist a big bowl of it for breakfast this morning. That’s right, buh-bye oatmeal and HELLO Granola!
What You’ll Need:
1 6-8oz skinless salmon fillet
1/4 cup 100% Organic Maple Peanut Butter Granola, click here to purchase online
2 tbsp tapenade
1 tbsp maple syrup
salt and pepper
What To Do:
Lay out all of your ingredients. Preheat the oven to 400F.
Rub salmon with maple syrup and season with salt and pepper.
Transfer onto a baking sheet lined with tin foil. Spread the tapenade evenly over the salmon. Top with granola and press lightly to make sure that it adheres tot he tapenade. Bake for 15-18 minutes until cooked through and granola is golden.
There you have it! A delicious and new spin on maple glazed salmon served here is a simple combination of roasted potatoes and steamed spinach.
